The production process of our mezcal
From Agave Field to Premium Bottle in 5 Steps
Tradition, sustainability, and authentic Palenque craftsmanship from Oaxaca in every single drop.
Careful agave harvesting
Only fully mature agaves are harvested.
The piñas grow for 6 to 8 years in the highlands of Oaxaca until they have reached their full aromatic maturity. Only then are they selected and sustainably harvested by experienced Jimadores.
Special attention is paid to the protection of rare wild agaves such as Tobalá, Cuishe or Sierra Negra, in order to ensure long-term biodiversity.
Slow pit roasting
The harvested piñas are traditionally cooked in underground earth pits.
Over many hours, the agave's natural sugars slowly caramelize between firewood and volcanic stones.
This process gives Mezcal its characteristic depth:
smoky, mineral, and at the same time slightly sweet notes typical of Oaxaca.
Milling with the Tahona
After roasting, the softened agave is slowly crushed with a traditional stone wheel, the tahona.
This creates the aromatic agave wort (mosto), which contains all the roasted sugars, botanicals, and terroir nuances.
This slow mechanical processing is significantly gentler than industrial mills and ensures a particularly complex flavor profile.
Wild Fermentation
The fresh must ferments naturally in open wooden vats.
Instead of industrial pure-culture yeasts, Loma Noble exclusively uses wild yeasts from the Oaxaca region.
This allows each batch to develop its own aromatic signature with fruity, spicy, floral, and earthy notes.
This is precisely where the soul of the future mezcal is created.
Hand bottling & final refinement
After distillation, each batch is carefully tasted and hand-bottled.
Every single bottle is labeled, inspected, and finalized to uncompromisingly ensure the quality of the Palenque.
The result is a premium Mezcal that combines the heritage of Oaxaca, traditional craftsmanship, and modern sustainability.
